Mint Iced Latte Recipe and other Minty Fresh Ideas

Iced Mint Latte

Ingredients - Option 1

  • 3/4 cup whole milk or almond milk
  • 2 shots of espresso
  • 2 teaspoons mint vanilla simple syrup (see recipe below)
  • Ice, Mint Ice Cubes (see recipe below), or Coffee Ice Cubes

  • coffee or mint ice cubes 
  • 2 1/2 tablespoons fresh mint syrup
  • 8 ounces cold brew coffee
  • 3 tablespoons milk, cream or sweetened condensed milk
  • fresh mint leaves for garnish

Vanilla Mint Syrup

Vanilla Mint Syrup

Ingredients - Option 1

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla bean paste
  • A large bunch of mint, chopped

Ingredients - Option 2

  • 1 cup water
  • 1 cup sugar
  • 1 big bunch of fresh mint leaves (around 3/4 cup)
  • 1 vanilla bean, seeds scraped
Directions - Option 1
  1. In a small saucepan over medium heat, add sugar and water and dissolve sugar into the water until no granules remain.
  2. Add the vanilla bean paste and chopped mint to the mixture, stir, let sit over heat for 3-4 minutes then remove from heat.
  3. Cool completely before storing.
  4. Either keep the mint leaves in the syrup to give it a stronger mint flavor or strain out the mint leaves before adding to jars. 
  5. Keep in refrigerator for up to three weeks.
Directions - Option 2
  1. Add the water, sugar, mint leaves and vanilla beans (and empty pod) to a saucepan and heat over medium heat.
  2. Whisk until sugar dissolves and mixture comes to a boil. Let it bubble for a minute or so, then reduce the heat and let it cool completely.
  3. Cool then refrigerate.
  4. In the morning (or before using), strain out the mint leaves and vanilla pod - or simply leave them in to continue flavoring the syrup.
  5. Keep sealed in the fridge for a week or so.

Mint Ice Cubes

Ingredients

  • 2 and 1/4 cup water
  • 1/4 cup sugar
  • 20 leaves fresh spearmint  or peppermint
  • 2 ice cube trays

Directions

  1. Boil the water, mint, and sugar for 10 minutes then let cool.
  2. Fill your trays halfway with the mixture and float a mint leaf on top of each cube  so you have a mint leaf in the middle of the ice cube. Freeze. 
  3. Then fill the trays the rest of the way with the remaining liquid. Freeze again.
