    Coffee Cocoa Buzz Balls Energy Bite Recipe

    Shannon created this recipe for a friend who was training for a marathon. They became so well love that they became a staple in her home. Think of these balls as "latte flavored chocolate oatmeal cookies", but with a healthy twist. Super cool oatmeal energy bite recipe.

    Makes: 12 servings

    Ingredients

    • 1 3/4 cup old fashioned oats slightly broken down in the blender
    • 1 cup all natural creamy peanut butter, almond butter, or sunflower seed butter
    • 1/2 cup raw honey
    • 1/2 cup mini chocolate chips I use enjoy life
    • 1 scoop chocolate protein powder
    • 2 tbsp cocoa powder
    • 2-3 tbsp finely ground coffee

    Instructions

    1. Combine all dry ingredients in kitchen-aid mixer bowl.
    2. Mix on low until ingredients are well blended.
    3. Add wet ingredients to blended dry ingredients.
    4. Mix on medium speed until a "dough" forms.
    5. Scrape sides of bowl with a spatula and mix again if needed.
    6. Remove bowl from Kitchen-aid stand.
    7. Using a 2-inch cookie scoop form dough into balls.
    8. Set balls on a parchment lined cookie sheet or storage container and refrigerate for at least one hour or until ready to eat.
    9. Keep refrigerated up to one week, if they last that long! Enjoy!

    No Bake Chocolate Coffee Energy Bite Recipe

    Packed with healthy fat, fiber, and protein, these no-bake chocolate coffee energy bites are delicious, easy-to-make, vegan, paleo and refined sugar-free! Here is the paleo energy bite recipe you were looking for this year!

    Total Time: 20 minutes
    Servings: 12 Bites

    Ingredients

    • 8 medjool dates pitted
    • 1/2 cup (strong) cooled brewed espresso or cold brew
    • 1 cup raw almonds
    • 1/4 cup unsweetened cocoa powder
    • 1 tablespoon chia seeds
    • Pinch of sea salt

    Instructions

    1. In a bowl, soak dates in the brewed coffee for 15 minutes. Drain the dates but don’t discard the brewed coffee.
    2. To a food processor, add the dates. Pulse dates for 2 minutes. Add 1 tablespoon of the brewed coffee until the dates become a thick caramel-like paste.
    3. Add the rest of the ingredients into the food processor - almonds, cocoa powder, chia seeds and sea salt. Pulse a few times until a dough-like mixture forms. If you want it crunchy, don’t blend for too long.
    4. Form mixture into 1-inch bites by hand. Refrigerate in an airtight container for 1 week or in an airtight resealable freezer bag in the freezer for up to 3 months. Enjoy!
