A Legacy Brewed: From Alfred Peet and Sal Bonavita to Weaver's Coffee & Tea

Explore the rich history of coffee, from Alfred Peet and Sal Bonavita and beyond. Discover how their legacy continues in Weaver's Coffee & Tea today.

The story of specialty coffee didn’t start with trends.
    It started with standards.

Long before coffee became a daily ritual for millions, a small group of pioneers reshaped how Americans experienced coffee, focusing on sourcing, roasting, and flavor with intention.

At the center of that shift were Alfred Peet and Sal Bonavita.

    Alfred Peet: Raising the Standard

In the 1960s, Alfred Peet introduced a different way of thinking about coffee in the United States.

    He focused on:

At a time when coffee was largely treated as a commodity, he treated it as a craft.

His influence extended far beyond his own business, shaping how an entire generation approached coffee.

Sal Bonavita: Carrying the Craft Forward

In 1979, Sal Bonavita took ownership of Peet’s Coffee and continued building on that foundation.

    His focus remained clear:

    • Consistency
    • Quality sourcing
    • Distinctive roast profiles

This period helped solidify what would become known as specialty coffee—a movement defined by attention to detail and respect for the product.

Where Weaver’s Fits Into the Story

In 1980, John Weaver began working under both Alfred Peet and Sal Bonavita, learning the discipline and standards that defined this era of coffee.

Over four decades as a master roaster, that knowledge was refined and carried forward.

In 2007, that experience became something new: Weaver’s Coffee & Tea.

    Today, that legacy continues through:

    • Carefully developed roast profiles
    • A focus on consistency and balance
    • A commitment to coffee that performs cup after cup

In 1979, Sal Bonavita acquired Peet's Coffee from its founder, Alfred Peet, marking a pivotal moment in the brand's history. Together they laid the foundation for the next sixty years of Specialty Coffee with a vision to deliver premium coffee beans sourced from the finest regions worldwide. Their dedication to quality was evident in every cup, ensuring that coffee aficionados experienced the true essence of each single origin coffee versus coffee blends. Their commitment to excellence shaped the early years of specialty coffee, setting a high standard in the coffee industry and roasts of coffee.

    Alfred Peet: The Coffee Maven

Alfred Peet, a Dutch-American entrepreneur born in 1920, left an indelible mark on the coffee industry with his commitment to quality and innovation. Renowned as a coffee connoisseur who brought European-style roasting techniques to America in 1966, revolutionizing the way coffee was perceived and enjoyed. His meticulous approach to sourcing and roasting coffee beans set a benchmark for the industry, influencing generations of coffee enthusiasts. Alfred Peet's journey into the world of coffee began in his native Netherlands and later Indonesia, where he developed a deep appreciation for the art and science of the roast of coffee and blending coffee. His early experiences would lay the foundation for his future as a trailblazer in the industry. Being a revered coffee connoisseur and the founding father of specialty coffee in California he revolutionized coffee appreciation. His legacy lives on in every cup of specialty coffee.  Beyond creating a successful business, Alfred Peet mentored and influenced the founders of Starbucks, Peet’s and Weaver’s Coffee & Tea, sharing his expertise in roasting and sourcing beans. His guidance was instrumental in shaping the early success of Starbucks and played a crucial role in defining the standards for quality coffee in the industry.

    A Bay Area Coffee Legacy

The San Francisco Bay Area has long been central to the evolution of coffee in the United States.

From early roasting innovation to modern specialty coffee, the region helped define what quality coffee looks like today.

Weaver’s continues that tradition—rooted in experience, built on craft.

    Why This History Matters

Understanding the history of specialty coffee changes how you experience what’s in your cup.

    It’s not just coffee.
It’s decades of refinement, experimentation, and standards being raised.

Every roast profile, every blend, every cup reflects that lineage.

    Experience the Legacy

Whether you prefer single origin coffees or blends, the goal remains the same: consistency, depth, and a coffee that delivers every time.

That’s the standard set decades ago—and the one still carried forward today.

In 1980, Sal Bonavita brought John Weaver into Peet’s Coffee, where he trained under both Bonavita and Alfred Peet. During this time, Weaver developed a deep understanding of coffee sourcing and roasting, helping refine both single origin coffees and blends with a focus on consistency and flavor.

In 1984, Peet’s Coffee was sold to Jerry Baldwin, but Weaver remained, serving as Master Roaster for 27 years. In 2007, he left to co-found Weaver’s Coffee & Tea and Wild Card Roasters alongside Renée Brown, Michael Brown, and Bryce Inouye. Today, Peet’s original coffee roaster is on display at the Weaver’s Coffee & Tea roastery in San Rafael, California.
