Who says coffee has to be in a cup! Certified Master Chef Sean Andrade of AWG Private Chefs, voted California's #1 Private Chef Company, has created this signature recipe for Weaver's Coffee & Tea.In a spice grinder:1/2 cup Weaver's Whole Bean Espresso Blend1 TBSP course grind sea salt3/4 TBSP whole telicherry pepper corns1/2 TBSP saigon cinnamon1/4 TSP cardamom1/2 TBSP fresh thyme leaves (or 1/4TBSP dried)1/2 TSP fresh meyer lemon zest1/2 TBSP dark chili powderWhiz until the consistancy of sand. Wash and pat dry a loin of pork, coatthe loin of pork in a thin coat of extra virgin olive oil, rub all sidesof the loin with the rub. Place in the fridge uncovered for 4-8 hours. Bake at 375 convection until internal temperature reads 140 degrees on aninstant read thermometer. Tent with foil and allow to rest for 10-15minutes. Slice on the bias, and serve with sauteed organic seasonalvegetables and truffled garlic red skin mashed potatoes.
