To prepare your coffee spice rub recipe, grab a spice grinder or the grinder you have access to in your home.
Whiz everything together until the consistency of sand. Wash and pat dry a loin of pork, coat the loin of pork in a thin coat of extra virgin olive oil, rub all sides of the loin with the rub. Place in the fridge uncovered for 4-8 hours. Bake at 375 convection until internal temperature reads 140 degrees on an instant read thermometer. Tent with foil and allow to rest for 10-15 minutes. Slice on the bias, and serve with sauteed seasonal vegetables and truffled garlic red skin mashed potatoes.
