Coffee has been part of our lives for a long time. We love the aroma when a fresh pot is brewing, the first sip in the morning, and the simple ritual of sitting down with a really good cup of coffee.
But coffee is more than something we enjoy. It is also one of the most studied beverages in the world. Over the years, researchers have looked at everything from coffee and heart health to its relationship with type 2 diabetes, liver disease, Parkinson's disease, and longevity. The results have given coffee drinkers plenty to feel good about, although the science is more nuanced than some headlines would have you believe.
So, is coffee good for you?
For most adults, moderate coffee consumption can be part of a healthy lifestyle. Coffee isn't medicine, and drinking more isn't necessarily better, but research has found some interesting associations between regular coffee consumption and long-term health.
When people talk about coffee and health, caffeine usually gets most of the attention.
Caffeine is certainly an important part of coffee, but there's much more happening inside your cup.
Coffee naturally contains hundreds of compounds, including polyphenols and chlorogenic acids. Roasting transforms many of these compounds and creates others, contributing not only to the aroma and flavor of coffee but also to its remarkable chemical complexity.
Researchers continue to study how these compounds interact with the body, including their possible roles in metabolism and inflammation.

Can drinking coffee actually help you live longer? What researchers have found is that people who regularly drink coffee have been associated with a lower risk of premature death in several large observational studies.
That's an important distinction. An association doesn't prove that coffee itself causes people to live longer. Coffee drinkers differ from non-coffee drinkers in all sorts of ways, and researchers have to account for many other lifestyle factors.
Still, when similar patterns appear across large groups of people and multiple studies, they're worth paying attention to.
The broader picture suggests that enjoying coffee in moderation fits comfortably into a healthy lifestyle for most people.
One of the more interesting areas of coffee research involves type 2 diabetes.
Studies have repeatedly found an association between regular coffee consumption and a lower risk of developing type 2 diabetes.
What's particularly interesting is that researchers have seen associations with both caffeinated and decaffeinated coffee. That suggests there may be more involved than caffeine alone.
Researchers continue to investigate compounds in coffee, including chlorogenic acids, and how they may interact with glucose metabolism.
Of course, what you put in your coffee matters too. A simple cup of coffee is very different nutritionally from one loaded with flavored syrups, sugar, whipped cream, and sweetened creamers.
Sometimes the simplest cup is also the one that lets you taste the coffee best.
If there's one area of coffee research that has received considerable attention, it's liver health.
Regular coffee consumption has been associated with a lower risk of several liver conditions, including chronic liver disease, cirrhosis, and liver cancer.
Scientists are still working to understand exactly why these relationships exist and which compounds in coffee may be responsible.
That doesn't mean coffee should be used to prevent or treat liver disease. It does mean that the relationship between coffee and liver health is one of the more compelling areas of ongoing coffee research.
Researchers have also studied the relationship between coffee, caffeine, and Parkinson's disease.
Observational research has associated coffee consumption with a lower risk of developing Parkinson's disease in some populations, and caffeine appears to be particularly interesting because of the way it interacts with the central nervous system.
That doesn't make coffee a treatment or a way to prevent Parkinson's disease.
The effect most of us notice is much more immediate: caffeine can increase alertness and reduce feelings of fatigue.

Coffee's relationship with the brain goes beyond the morning caffeine boost.
Researchers have investigated whether regular coffee consumption is associated with cognitive health as we age, including the risk of cognitive decline and neurodegenerative diseases such as Alzheimer's disease.
Some observational studies have found promising associations, but this is an area where we think it's important not to get ahead of the science.
We can't say that drinking coffee prevents Alzheimer's disease or dementia.
What we can say with much more confidence is that caffeine stimulates the central nervous system and can temporarily improve alertness and concentration.
Coffee hasn't always had the best reputation when it comes to heart health.
Years ago, people were often told that coffee might be bad for the heart. As more research has accumulated, the picture has become much more interesting.
Moderate coffee consumption has been associated with a lower risk of certain cardiovascular conditions, including coronary artery disease and stroke, in some populations.
Caffeine can temporarily affect blood pressure and heart rate, however, and people respond to it differently. Someone who drinks coffee every day may react very differently from someone who rarely consumes caffeine.
Brewing method matters here too.
Unfiltered coffee, including coffee made with a French press or certain boiled-coffee methods, contains compounds called cafestol and kahweol. These naturally occurring compounds can raise LDL cholesterol. Paper filters remove much of them, which is why filtered coffee may be a better choice for people concerned about cholesterol.
That doesn't mean you need to give up your French press. It's simply another example of how the way we brew coffee can change what's in the final cup.
Coffee's relationship with cancer is another area where our understanding has changed over time.
Current research does not support the old idea that drinking coffee generally increases cancer risk. In fact, coffee consumption has been associated with a lower risk of certain cancers, with some of the strongest evidence involving liver and endometrial cancer.
Researchers are studying coffee's naturally occurring plant compounds and their possible effects on inflammation, oxidative stress, and other biological processes.
We wouldn't call coffee a cancer-prevention drink, though. That's taking the research too far.
What the evidence does show is that coffee is a much more complex beverage than we once understood.
This is probably one of the most common questions we hear about coffee, and there's no perfect number that applies to everyone.
For most healthy adults, up to about 400 milligrams of caffeine per day is generally considered an amount that isn't associated with negative effects.
But 400 milligrams of caffeine isn't the same thing as four cups of coffee.
A "cup" can mean almost anything these days, and caffeine content depends on the coffee, serving size, coffee-to-water ratio, and brewing method.
More importantly, everyone responds to caffeine differently.
Too much caffeine can cause:
Jitters or restlessness
Trouble sleeping
Anxiety
Headaches
Digestive discomfort
A rapid or noticeable heartbeat
Pay attention to how coffee makes you feel.
If your afternoon coffee keeps you staring at the ceiling at midnight, your body is giving you a pretty clear answer. Try drinking it earlier, reducing the amount, or replacing that later cup with decaf.
Pregnancy is one situation where caffeine intake deserves additional attention.
Health organizations generally recommend limiting caffeine during pregnancy. Remember that caffeine doesn't come only from coffee. Tea, chocolate, soft drinks, energy drinks, and some medications can also contribute to your daily intake.
Anyone who is pregnant, breastfeeding, taking medication, or managing a medical condition should talk with a qualified healthcare professional about how much caffeine is appropriate for them.
As coffee roasters, this is a question we find particularly interesting.
Roasting changes coffee dramatically. Heat transforms the bean's chemistry while developing the aroma, sweetness, acidity, body, and flavor we experience in the cup.
Naturally, researchers have studied whether those changes make one roast level healthier than another.
At this point, there isn't good enough evidence to declare one roast level universally healthier than another. Choose your roast because you love drinking it.
A balanced medium roast, rich medium-dark roast, and bold dark roast can each produce an exceptional cup of coffee. What matters most is starting with quality coffee and roasting it carefully to develop the flavors that make that particular coffee special.

We don't think there's one "correct" way to drink coffee.
If you love a splash of milk in your morning cup, enjoy it. If you prefer your coffee black, that's great too.
From a nutritional standpoint, though, what you add to coffee can make a big difference. Black coffee contains very few calories. Add large amounts of sugar, flavored syrups, sweetened creamers, and whipped toppings, and you're drinking something quite different.
Brewing method is another consideration. As we mentioned earlier, paper-filtered coffee contains much lower levels of cafestol and kahweol than unfiltered methods such as French press.
And then there's caffeine.
If you're drinking so much coffee that you're jittery, anxious, or not sleeping well, that's worth paying attention to. More coffee isn't always better coffee. We'd rather have a few cups we truly enjoy.
For most adults, the research gives coffee drinkers plenty of reasons to feel comfortable enjoying their daily cup.
Regular coffee consumption has been associated with a lower risk of type 2 diabetes, certain liver diseases, some cardiovascular conditions, Parkinson's disease, and certain cancers. Coffee also contains a fascinating mixture of naturally occurring compounds that scientists continue to study.
But coffee isn't medicine.
How much you drink matters. How your body responds to caffeine matters. How you brew it and what you put in the cup matter too.
We've spent decades roasting coffee, and one of the things we still love about it is how much there is to discover. Change the coffee, the roast, the grind, or the brewing method, and you can create an entirely different cup.
The science behind coffee only makes it more interesting.
So enjoy your coffee for what brought most of us to it in the first place: the aroma, the flavor, the ritual, and that wonderful first sip.
