Earl Grey Coconut Protein Energy Bite Recipe

We all need an energy bite throughout the day.  Some people prefer just a cup of coffee or a cup of tea.  However, what if we found a delicious energy bite recipe that was super healthy and easy to make?  Perfect way to start the day with a cup of Weavers Coffee or Weaver's Tea, or as a “pick me up break" midway through the day. This yummy energy bite recipe is filled with protein and brain power to give your body a natural energy boost. (made with Weavers Earl Grey Tea Leaves)

Earl Grey Coconut Protein Energy Bite Recipe

Ingredients: 

  • 1/3 cup coconut oil
  • 2 cups unsweetened dried coconut flakes
  • 1 TBSPN hulled hemp seeds
  • 1/2 cup raw cashew pieces
  • 1 TBSPN xylitol or sweetener of choice
  • 1/2 tsp non alcoholic vanilla
  • 1 tsp Weavers Earl Grey tea leaves pulverized in a clean coffee grinder
  • Juice of one lemon
  • Zest of half lemon
  • Pinch of sea salt

Add first three ingredients to a food processor. Blend until you have reached a creamy buttery consistency. About 10 minutes, stopping every two minutes to scrape the sides down. Be patient. Add the remaining ingredients and blend unit fully incorporated. About 30 seconds. You will still see some small cashew bits.

Transfer mixture to a bowl and place into refrigerator for 15 minutes. Remove from fridge and roll into 1.5 inch balls. Store in refrigerator, let sit at room temperature for 5 minutes before serving.

Makes 18.

Keeps refrigerated for 3-5 days. Keeps frozen in freezable container for 3 months.
